Peggy Soloman's Strawberry Soup
Ingredients
1½ cups sugar
¾ cup water
4 cups strawberries
1½ tsp grated lemon or lime peel
2 teaspoon grated orange peel
¼ cup orange juice or sherry
Instructions:
Combine sugar and water in sauce pan - bring to boil - simmer 10 minutes - cool
Combine other ingredients ( including cooled sugar mixture)in large bowl - Process in blender until smooth ( 2 batches)
* Can be strained into large bowl and seeds discarded - I skip this step,as I find it unnecessary
Serve as a cold soup at beginning of a meal or with whipped cream as a desert. Also makes a great base with sparkling water for summer drinks! |
