Bob Godfrey's famous Greek potatoes
1/2 cup lemon juice
1/4 cup water
1/4 cup olive oil
2 cloves garlic, minced
1-1/2 tsp dried oregano
1 tsp salt
1/4 tsp pepper
2 lbs peeled potatoes
1 onion, thinly sliced
1/2 to 1 tsp Cavenders All Purpose Greek Seasoning
2 to 3 table spoon chicken soup base
1. In a large bowl, whisk together lemon juice, water, oil, garlic, oregano, salt, pepper, spices and chicken soup base.
2. Slice potatoes lengthwise or in cubes,
3. In a baking pan, spray with Pam. Spread onions on bottom of pan. Put potatoes on top of onion layer then pour the mix in.
4. Cover with tin foil, bake in oven at 350 degrees for 2 hours or until done.
5. Enjoy!!!!!!!!!
You can play with the proportions for taste. Depending upon the amount of potatoe added, you may need to increase the fluid part. |
